Today I'm going to try and make a butternut squash pie with one of the big-ass butter-butts I just harvested.

I used 1/4 less cream cheese, added a tablespoon of butter and *only* used brown sugar. It came out more like a brown sugar ganache than a cheesecake type filling which is exactly what I was going for.

And the cookie dough is shortbread dough rather than basic cookie dough like the others. So it is a different recipe, but same concept.

Next I'm gonna try chocolate brownie cookies with peanut butter cream filling. No cream cheese at all. I'll let you all know how they turn out

I’m not much of a baker, I’m a much better cook, but I think I need to try these out!

I'm *ok* at cooking, but my fella is definitely the king of the kitchen when it comes to mealtime. But dessert? And beverages.... I'm the one wearing the crown and making magic happen in the kitchen 🪄

Just basic cookie dough with sprinkles and the basic cream cheese filling I used with my first cheesecake cookies but these came out so cute. I didn't get to enjoy them all. Good thing I can MAKE MORE!!

Tonight we're doing breakfast for dinner ala TnJ.

Crispy bacon, fluffy scrambled eggs and my first attempt at homemade biscuits from scratch.

I made cute lil triangle biscuits. If they bake ok I'll share pics.

Oh and the squash pie fucks hard. So good.

More pecan shortbread cookies but the shortbread dough was make with mostly brown sugar for a deeper flavor profile.. and the cheesecake filling is slightly under sweetened intentionally and make with powdered white sugar to give contrast to the cookie dough. Caramelly, nutty cookies with a tangy creamy filling.

They came out PERFECT.

 
So, I was bored and decided to bake some fall spiced muffins. I didn't realize until I had already mixed everything but the egg into the batter that we don't have eggs. But we have a jar of expensive Mayo. So I experimenting 😈

I added a quarter cup to the batter and so far they look and smell amazing. I'm thinking it's gonna do the job the egg would have and add a bit of a tang to the finished bakies.

They might even be more moist than they would have been with an egg because there's less water to steam out without the actual fresh egg.

Any bakers here, next time you make muffins instead of an egg use a quarter cup of mayo. Do it.

For dinner I'm making pigs in a blanket. Fresh homemade dough, which I decided last minute to add a lil garlic and onion powder. And.... Finely diced roasted NM green chili. If you've never smelled a kitchen with fresh green chili roasting you're missing out. I'd wear that fragrance if it could be bottled.

I'm frying the dogs a bit before baking so they steam out a lil moisture and avoid making my dough soggy.

Leftover pasta on the side.

Kinda lazy, kinda not. I'm really excited about my chili dough!

He's cooking tonight..

Green chili chicken enchilada casserole, I've mentioned it before. This time though he found some super fresh, super hot green chili and THIS HOUSE SMELLS GOOD ENOUGH TO ORGASM.

It's not even in the oven yet. I'm gonna overeat for sure and I accept the consequences.

I love natural peanut butter and cayenne pepper sandwiches or sliced fresh jalapenos or serranos. I'm very weird when it comes to pb sandwiches and no one is willing to try these. I also love plain natural pb sandwiches with a ton of salt in them or with salt and chipotle powder.

I've been like this since I was a kid. I couldn't eat the sweet processed pb my parents would buy the kids and would dip my spoon into their natural pb and then throw on ground black pepper. I've never been a sweet food person.

Natural pb and sauerkraut is delicious, too.

Tonight I'm making honey butter biscuits. Butter is in the freezer now, the cheese grater is ready to grate the frozen butter when it's nice and hard.. I'm excited as eff yo.

I watched this and got way inspired.
I'm doing it exactly as she describes. My butter should be pretty hard soon it's been in the freezer for about an hour.

I love biscuits. I'm not sure what we'll have them with but I'm trying to make these things the star of the meal.
