If you do holidays, what is your traditional dinner for the occasion?

I may be a Grinch lol... But uh.. I love the fact that his family always brings over SO MUCH FOOD.

X-mas style Enchiladas (which means using red and green New Mexico chilis), tamales, farm to table pork prepared in a variety of ways because we have a Matanza right before Christmas almost every year (if you don't know what that is it's worth googling, New Mexican food is the best food). For dessert, homemade Biscochito cookies. Again, a New Mexico tradition.

Chili 🌶️ keeps you warm. The lard in the Biscochitos keeps you fueled.

Turkey, nuh uh. Pork, Chili, and COOKIES!
 
Tamales! Christmas Eve tamales! As far back as I remember there was an assembly line in the kitchen. Everyone who worked on the ranch was there! Some were cooking, some were mixing the masa, some were rolling, everybody was helping.

I promised Mum I would be home this Christmas, and here I am. And yes, we had tamales! We didn't make them, but some friends did. And we feasted!
 
Roast turkey, mashed potato (with extra mature cheddar), pigs in blankets,
(Little sausages wrapped in bacon), honey glazed carrots and parsnips with cumin, roast potatoes (half seasoned with rosemary, smoked paprika and pepper, half with a lightly spicy yoghurt marinade with onions), brussel sprouts and gravy. So it's pretty traditional. I just avoid Christmas pudding lol.

Roast goose, bread sauce, chicken breast, roast potatoes and parsnips, brussel sprouts cooked with chestnuts and spicy red cabbage.
Christmas pudding with brandy filled mince pies, double cream and brandy butter.
Washed down with a nice bottle of Villages.

Our family prepares the usual rotation of main dishes for Thanksgiving, Christmas, New Years or Easter. They would be in order: turkey--prime rib--(fill-in-the-blank) plus alcohol--ham. If we're in Florida we do buy a couple of Publix key lime pies on Christmas.
