I've seen a number of unedited, legitimate videos of men peeing well over one liter. There's a lot of variation in the human body, and bladder size is one of them. I've only seen a couple of two liter pees, so I suspect that anything beyond that involves pathology.
My two cents, given how much "science" is debated here. Natural variation in bladder size apart,
1. yes, most people start feeling the need to pee with 300-400ml of urine in the bladder, with ~800-900ml as the trigger point when it is no longer possible to voluntarily hold back. A reflex reaction will empty everything against your wish ("pee on yourself" as mentioned above). HOWEVER
2. with regular training of holding back (seems like a favourite hobby on this thread), the bladder muscle learns to stretch and accept a higher tolerance to the urge to empty. That leads to larger volume for those looking to break the Guinness record. WARNING however:
3. the sphincter muscle that controls your pee lies below your prostate. When you feel the need to go, your bladder tests slightly to push the liquid out, and holding that forcefully back (i.e. squeezing your urinary sphincter) encourages urine to infiltrate your prostate. That is a strong suspect causing prostatitis, for those who care about your longer term prostate health...
4. things are worse for those with diabetes. That insensitization of the bladder nerves is a suspect causing nerve damages of the bladder which leads to lots of problems afterwards....

I also find it hot to watch guys fighting to hold it back, though. Just don't ask me to do it! :p

I'm a type 2 Diabetic and, if anything, I've found my holding capabilities, although still below average, have improved since I was diagnosed. That said, I started with a cold on Thursday and part of keeping the symptoms manageable has been drinking rather a lot of bottled water. Inevitably that's increased my need to urinate, especially at night, despite being a good boy and always going for a wee at bed time!
