Always take their stated/declared sexuality with a grain, or rather, a handful of salt. Their job is to market and sell themselves to as many people as they can. Some will tell one fan they're gay and in the same hour turn around and tell someone else they're bi/straight/etc because they want consumers to buy into their work. That's their job. Some are honest about how they truly identify, others are not, either way it doesn't matter, it's a job. No human lives their life in 100% honesty anyway.

2. Gay men can have sex with women, straight men can have sex with men:

Humans are capable of doing things they do not enjoy for the hell of it, or more commonly, the great great motivator of money. I do agree though that if at any point a gay man actively enjoys sex with a woman, or a straight man enjoys sex with a man, in my personal view I don't necessarily think they are 100% gay or straight, as attraction and enjoyment are what we all seem to agree are markers of orientation. However, I also fully believe my opinion doesn't mean jack shit, and if some gay guy fucks a woman, actively enjoys it, but still wants to claim he's gay, I'm not about to get up and tell him no because his take on his own sexuality does not affect me, it doesn't dilute anything for me. It has no effect, so there's no reason to get up in arms about it.

The rarity and forbidden aspects are definitely big factors. I think some straight to gay can be hot if the work is there but most of the time you just have the straight guy going along with no real effort. (the same sometimes happens with gay to bi or straight material, which also bores me) With a few exceptions, I don't care about the performers without material to back them up, unless the performers have a ton of chemistry (a rarity in any porn).
