Thanks. I know.....they ripen, but they are so sour that they are awful. Really good peaches are sweet and delicious. You can tell just by the aroma when you put one up to your nose. If you can't smell all that deliciousness.....they're gonna be terrible.....even when they ripen.
I know exactly what you mean. It's hit or miss from season to season with produce. There's a fresh produce stand down the street from my house and his peaches were so unbelievably good last year that I overdid it with cobblers, so this year I stuck with melons, which were really good.

That said, I've had the same tasteless problem with avocados this year that you've experienced with peaches.
 
Dog Biscuits

This is for your canine friends.

There aot of different ways you can make treats for dogs. Of course, most are content with whatever drops on the floor.

In making your own, you can specially tailor the ingredients. Making dog food grain free is quite popular, for example.

1 & 1/2 chickpea flour.
1/2 cup peanut butter.
1/2 cup pumpkin puree.

Combine ingredients.
Knead till a dough ball is formed.
If too sticky, add a little chickpea flour.
Cover and refrigerate for 1 hour.
Roll dough out to 1/2 inch thickness.
Cut out with cookie cutters.
Preheat oven to 350°.
Line baking sheet with parchment paper.
Place cut out cookies on baking sheet.
Bake for about 25 minutes.
Keep biscuits in oven.
Turn heat off and prop oven door open (to help dry them out) for 30 minutes.
Check to ensure bottoms aren't burning.
Remove from oven and dry on counter for about 5 hours.

Consider making them with bananas, sweet potato, or grated carrot.

Cheddar Biscuits

(for people)


2 cups flour.
1/2 tsp salt.
2 1/2 tsp baking powder.
1/2 tsp baking soda.
1 cup cheddar cheese, shredded.
1 cup buttermilk.
2 tsp milk.
1/2 cup butter, in small pieces (cold).
1 egg.


Preheat oven to 400°.
Line baking sheet with parchment paper.
Combine flour, powder, soda, and salt.
Mix well.
Add butter pieces to flour.
Mix to form crumbly texture.
Mix in cheese.
Add buttermilk.
Mix until just combined.
Press dough out to 1/2 inch thickness.
Fold dough into thirds.
Press dough out again to 1/2 inch thickness.
Cut into rounds with biscuit cutter.
Place rounds on baking sheet.
Gather up remaining dough.
Press, fold, and press, then cut until no dough remains.
Whisk together milk and egg.
Brush egg over biscuit tops.
Bake for about 20 minutes, until golden brown and risen.

Do not over mix.

Freshly grated cheese will work better.

Make sure butter is cold.

Layered Ice Cream Gelatin

With this we'll need vanilla ice cream. Interestingly, vanilla shares its origin with vagina from a word meaning little sheath in Latin. It offers a new insight in vanilla sex.

4 (3oz) packages of gelatin (four distinct colors, like strawberry, lemon, lime, and orange).
1/2 gallon vanilla ice cream, sliced into fourths.


Select color arrangement of layers.
Start with the bottom layer.
Dissolve one package of gelatin in a cup of water.
When gelatin is completely dissolved, add one slice of the ice cream.
Stir till completely dissolved.
Pour into a 9x13" pan.
Set in refrigerator for 30 minutes.
If set, follow the steps till all layers are set.
Keep refrigerated until serving.

There are a lot of possibilities when it comes to party mixes: mini pretzels, Corn Chex, Wheat Chex, Rice Chex, Cheez-its, mini club crackers, mini dry pumpernickel, oyster crackers, Bugles, goldfish crackers, Cheerios, (Cajun?) popcorn, smoked almonds, smoked pecans, mixed nuts, various fried fruits, toffee bits, M&Ms, corn candy, gummy bears, mini marshmallows.....

1 cup butter.
1/4 cup Worcestershire sauce.
2 tbs dry ranch mix.
2 tbs brown sugar.
1 & 1/2 tsp Italian seasoning.
1 & 1/2 tsp red pepper flakes (or more).
1/2 tsp cayenne pepper (or more).
1/2 tsp cumin (or more).
1 tsp paprika.
1 tsp garlic powder.
1 tsp onion powder.
3 cups of dry dry ingredient from above list.
3 cups of a different dry ingredient.
3 cups of a different dry ingredient.
1 & 1/2 cups dry ingredients from above but larger (pretzels, Cheez-its, pumpernickel...)
1 & 1/2 cups dry ingredient from above.
1 & 1/2 cups dry ingredient from above.
1 & 1/2 cups sweet ingredient from above (marshmallow or candy)
1 & 1/2 cups nuts.
1 & 1/2 cups dried fruit (optional).

Preheat oven to 250°.
Line baking sheets with parchment paper.
In a sauce pan melt the butter on medium-low heat.
Add Worcestershire sauce, sugar, and all spices.
Stir till sugar is completely dissolved.
Set aside to cool.
In a very large bowl combine all selected dry ingredients (omit candy and marshmallows).
Blend carefully.
Pour sauce into bowl, gently tossing as it is being added.
Evenly coat.
Spread out on baking sheets.
Bake for one hour, stirring every 15 minutes.
Cool completely.
Add candies if desired.

Select your favorite berry or combine them!

2 & 1/2 cups flour.
1 tbs baking powder.
1/4 tsp salt.
1 cup sugar.
2 tbs orange zest.
3 tbs orange juice.
1 tsp vanilla extract.
1/2 cup butter, melted.
1 cup sour cream (or Greek yogurt).
2 large eggs.
1 cup dried berries (blueberries or cranberries).
1 cup fresh or frozen berries (blueberries or cranberries).

garnish with
2 tbs sparkling sugar.

Preheat oven to 425°.
Spray a muffin tin with cooking spray or use muffin liners.
Whisk together flour, salt, powder, sugar, and zest.
Make a well in the flour.
To the well add butter, sour cream, juice, eggs, and vanilla.
Whisk wet ingredients in well, slowly incorporating dry ingredients.
Fold batter until just combined.
Using as few strokes as possible, fold in berries (dry and fresh/frozen).
Add batter to muffin pan.
Sprinkle each muffin with sparkling sugar.
Bake for 5 minutes.
Lower heat to 350° without opening door.
Bake for about 15 minutes.
Done when an inserted toothpick comes out clean.

Watermelon Salad

3 cups watermelon, cubed or balled.
1 & 1/2 cups cucumber, sliced & seeded.
2 tbs mint, chopped.
1/3 cup feta cheese.
3 tbs olive olive.
1 tbs lime juice.
Salt to taste.
Pepper to taste.

Mix together melon, cucumber, and mint.
In a small bowl, whisk together juice, oil, salt, and pepper.
Drizzle sauce over fruit.
Toss to coat.
Sprinkle feta on top.

Consider adding chopped spinach, mango, onions, pineapple, strawberries, cherry tomatoes.....

Grape Salad

2 cups seedless grapes, halved (red or green).
1/4 cup Greek yogurt.
2 tbs honey.
1/8 tsp cinnamon.
4 oz cream cheese, room temperature.

Beat cream cheese.
Mix together cream cheese, yogurt, honey, and cinnamon.
Stir in grapes.
Garnish with chopped nuts and/or dried fruit.

Enjoy.
 
Chocolate Covered Grapes

25 seedless grapes (red and/or green).
1/2 cup chocolate (milk, dark, or white).
1 tps vegetable oil.
Chopped nuts or sprinkles or toffee pieces.


Put a toothpick in each grape.
Spread out parchment paper.
In a double boiler, melt chocolate with oil.
Dip grape in melted chocolate.
If desired, dip in nuts, sprinkles, or toffee.
Chill on parchment paper.

Mushroom Pork Chops

2 lb pork chops, boneless.
Salt to taste.
Pepper to taste.
1/2 tsp paprika.
4 cloves garlic, minced.
1 tsp Dijon mustard.
1/4 cup butter.
8 oz. Mushrooms, sliced.
2 tbs flour.
2 cups broth, beef or mushroom.


Season both sides of pork chops with salt, pepper, and paprika.
On medium-high heat, add 2 tablespoons of butter.
Sear chops on both sides till golden brown (about 3 minutes per side).
Remove from skillet and set aside.
Add remaining butter.
Add mushrooms when butter is hot.
Cook till golden and excess moisture evaporated (about 5 minutes).
Add garlic and mustard.
Cook for an additional minute.
Add flour.
Whisk to remove lumps.
Slowly add broth while stirring until fully incorporated.
Season with salt and pepper.
Reduce heat to medium.
Add chops to pan.
Stir till sauce is thickened (about 5 minutes).
Check to ensure pork is cooked through.
Serve hot.
 
Spinach Mashed Potatoes

3 lb potatoes.
6 oz spinach.
1/2 tsp salt.
1/4 tsp pepper.
1 tsp garlic, minced.
1/3 cup butter.
1 tbs olive oil.
4 oz cream cheese, room temperature.
1 cup heavy cream.
2 cups cheese, grated (cheddar, pepper jack, Colby Jack, or mozzarella).


Scrub, peel, and dice potatoes.
Add potatoes with salt to pan.
Cover potatoes with water.
Bring water to a boil.
Reduce heat and simmer till potato chunks are tender (about 15 minutes).
Add olive oil to a skillet.
On medium heat add spinach and garlic.
Stir till wilted.
Remove from heat.
Drain potatoes.
Mash potatoes.
Add cream cheese, grated cheese, butter, salt, pepper, and heavy cream.
Stir till incorporated.
Fold in spinach.
Garnish with Parmesan cheese or feta cheese.

Enjoy.

2 trout fillets.
Salt.
Pepper.
1 tbs olive oil.
1 tbs balsamic vinegar.
1 tbs sugar.
1/4 tsp ginger.
1/4 tsp cinnamon.
1/2 cup blackberries.


Season fillets on both sides with salt and pepper.
On medium-high heat olive oil.
Add trout.
Fry till cooked through about 3 to 4 minutes on both sides.
Remove fillets and set aside.
Add blackberries, sugar, cinnamon, ginger, and vinegar.
Cook until berries are broken down and sauce thickened about 5 minutes.
Spoon sauce over trout and serve.

Enjoy.
 
Lemon Butter Trout

2 trout fillets.
Salt.
Pepper.
2 tbs olive oil.
2 tbs butter.
1 tbs Italian seasoning.
4 cloves garlic, minced.
3 tbs lemon juice.
2 tbs white wine.
2 tbs parsley flakes.


Season fillets with Italian seasoning, salt, and pepper.
Heat olive oil in a skillet on medium-high.
Fry trout till cooked through about 3 to 4 minutes on both sides.
Carefully remove fillets from skillet and set aside.
Reduce heat to medium-low.
Add garlic, lemon juice, and wine.
Cook 1 minute.
Add butter and parsley flakes.
Cook until creamy.
Spoon over trout.

Enjoy.
 
Poppyseed Cookies

1 & 1/4 cup flour.
1/2 tsp baking soda.
1/4 cup sugar.
1/2 butter.
3/4 cup poppyseed.
1 tsp lemon zest.
1/4 tsp cloves, ground.
1 egg.

Beat butter and sugar together until fluffy.
Beat in egg and zest.
Combine flour, soda, and cloves.
Stir flour mixture into butter mixture.
Roll dough to 1/4 inch thickness (10x12 inch rectangle).
Refrigerate 30 minutes.
Preheat oven to 350°.
Line baking sheets with parchment paper.
Spread seed on dough, leaving 1/4 inch border.
Roll dough up tightly.
Cut into slices between 1/4 to 1/2 inch thick.
Place on baking sheet.
Bake about 10 minutes until edges are lightly browned.
Cool on a wire rack.
Sprinkle lightly with powdered sugar.

1 lb rhubarb, cut into small slices.
1 cup golden raisins.
1 medium onion, chopped.
2 cloves garlic, chopped.
1 cup sugar.
1 tsp cinnamon.
2 tsp ginger.
1/8 tsp cloves, ground.
1/8 tsp red pepper flakes.

In a sauce pan, combine ingredients.
Mix and cook over medium-high heat.
When it starts to boil, reduce heat to medium.
Cook for about 15 minutes until slightly thickened.
Refrigerate for at least an hour.

Serve over fish, or pork chops, or spread on crackers with cream cheese.

Enjoy.

3 cups pecans, chopped.
1/2 cup butter.
1/2 cup brown sugar.
1/2 cup maple syrup.
2 large eggs, beaten.
2 tbs heavy cream.
Sea salt, coarse (optional).

Preheat oven to 350°.
Line a 9x13 inch baking pan with parchment paper.
Cut (crust) butter into slices.
Heat butter in a skillet on medium heat.
Melt the butter, while stirring.
Butter with begin to foam.
Continue stirring, till butter begins browning (about 5 minutes).
Once browned, remove from heat and cool for 5 minutes.
In a bowl, combine browned butter, sugar, salt, and vanilla.
Stir in flour till evenly combined.
Press evenly into baking pan.
Bake for 15 minutes.
In a sauce pan combine (filling) butter, brown sugar, syrup, and cream.
Heat on medium heat.
Whisk to dissolve sugar.
Bring to a boil.
Boil for 3 minutes.
While boiling, carefully remove 1/2 cup of mixture.
Slowly drizzle in removed 1/2 cup mixture to eggs while stirring.
If adding to fast or not stirring the eggs will scramble.
Once 1/2 cup mixture is fully added to eggs, slowly drizzle this back to the sauce pan while whisking.
Remove from heat.
Stir in pecans.
Pour evenly over crust.
Add sea salt if desired.
Bake for 30-35 minutes.
An inserted toothpick will come out mostly clean.
Remove from oven and let cool completely.

Enjoy.
