At one point in the Sardinia episode he talks to a 98 year old woman who was born in April 1920, so it must have been filmed around 2018, maybe early 2019 at the latest.

Yes, everything was filmed in 2018.
In the last episode, they show how Darin Olien's house was burned down during the 2018 wildfire in California. They were shooting the last episode when he received the call. It was pretty sad to watch.
