The world of sushi feels pretty limitless. There's sticky strips of eel served over tangy rice, raw squid to chew on, and pink butterflied shrimp. That's before we even get into the Americanized rolls crammed with mayonnaise and cream cheese. From the fatty cuts of salmon delicately placed over hand-crafted balls of rice to lightly sweetened eggs, there seems like something for everyone.

It is interesting that three chefs highlighted mackerel as underrated so I guess mackerel will soon be very much in demand.

Meanwhile four chefs dissed tuna - this might mark a downturn in tuna consumption.

Albacore received one thumbs down while its belly received one thumbs up.

Whatever they say, I like unagi (eel) especially because of its sauce and I find sea urchin delicious. I like the crunch of jelly fish and the smoothness of salmon. Raw whale meat is over rated (but I have a feeling it might have been a cheap cut that I ate in Japan).
