I found the dip recipe in a Paula Deen cooking magazine.
It's so easy and delicious. It's meant for french fries, but
I knew it would be good with the fried green tomatoes.

Thoroughly mix equal parts mayonnaise, ketchup, and ranch dressing. Add a pinch of sugar.
 
I had a chocolate tart. :rolleyes: (To the Brits, no I din't sleep with a black loose woman.) I didn't get to take a pic of it. It was good though.

Well, in a couple of days, I am going to bake two (Paula Deen recipe) Hummingbird cakes. One is for me and the other is for my niece.

I am waiting for the bananas to overripen at the moment. Once those get ripened to that point of having a total brown skin on the bananas, I will start making the cake. I will take a picture of the cake when it gets done.

Paula Deen Hummingbird Cake


CAKE:
3 Cups self-rising flour
2 Cups granulated sugar
3/4 Cup vegetable oil
1/2 cup chopped pecans
2 very ripe large bananas - mashed
1 can (8oz) crushed pineapple
1 tsp vanilla extract
1 tsp ground cinnamon
4 large eggs, beaten

ICING:
1 pound box confectioners’ sugar
8oz package cream cheese- room temp
6 tbs butter, softened
1 tsp vanilla extract
1 tbs milk, more if needed
1/2 cup finely chopped pecans

Preheat oven to 325*
Grease and flour three 8 inch round cake pans. In a large bowl, combine flour, sugar, oil, 1/2 cup pecans, bananas, pineapple, vanilla, cinnamon and beaten eggs. Stir well until smooth.
Pour batter into the 3 pans and bake for 26-28 min, or until tops spring back. Let cool in pans for 10 min. Then cool on racks completely.
Make the icing by mixing the sugar, cream cheese, butter, vanilla and 1 tbs milk in a large bowl with an electric mixer. Mix until smooth. If needed add more milk, 1 tsp at a time for proper spreading consistency. Ice between each layer and on the top and sides. Sprinkle the top with pecans. Keep refrigerated.

I know, but it was a Greek festival and I wanted the full experience!
Ahh, well then that's okay. :biggrin1: But now I don't think you had enough to eat. :tongue: Next time get some moussaka with eggplant, spanakopita, and some baklava for dessert. :cool: I think it's a sin to go to any ethnic food festival and leave hungry. :smile:

The bananas overripened this evening. And I baked the Hummingbird Cake.
It tasted amazing!!! My mom baked a Hummingbird Cake once when I was a teen. This recipe will make a rich cake and frosting.

Sorry it's all gone, I just finished the last of the ice cream a minute ago.
But tonight we are having brisket, au gratin potatoes, glazed carrots and a spinach salad. I have fresh blueberries so maybe blueberry ice cream or a pie, I have not decided.
