What's for dinner?

Nothing special or fancy...just some comfort food tonight..

Chicken fried steak and onions
Garlic grits
Baked sweet potato with orange butter
Turnip greens with fat back and rutagagas
Biscuits
Coffee
Fresh rassberries on vanilla ice cream
 
Come to the South. We have barbecue and moonshine...
Ah man, I'm a sucker for some great bbq... moonshine as well, coincidentally... HA! I gotta get back down there, I love it. I might just have to order out for some wings now... I know, not even close, but they'll do :biggrin1:
 
Well it's not what's for dinner, but I just had the best snack.
popcorn with Ben & Jerry's Chocolate Fudge Brownie ice cream topped with hot fudge sauce and sprinkled with peanuts.
 
I have been in a very "Comfort Food" mood for the last few weeks
and cooking lots of my favorite dishes...

Tonight will be "Tennessee Chicken":

Render small pieces of streak-o'-lean or fat-back in a large iron skillet, until it is
beginning to turn dark.
Add flour sifted with some salt and pepper and cook on low until you have a light
cream colored roux.
Add milk and simmer until thick and a creamy color (do not let it turn a dark color).
Add chopped hard-boiled eggs.
Serve over hot buttermilk biscuits.

Side salad of lettuce, tomatoes, spring onions, with a balsamic and extra virgin
olive oil dressing.

Apple pie with chedar cheese
 
A leg and a breast of a half-price garlic 'n' herb chicken from the rotiserie at the supermarket near closing-time with a buttered baked potato and steamed brussel sprouts. (Too full for a desert.)

There's two more meals and a soup to come from that bird - not bad for £2!
 
A HealthyChoice brand frozen dinner of meatloaf, mashed potatoes, corn, and fruit crisp! Yum yum!
 
Mexican cauliflower soup

One head of cauliflower cut up and steamed until tender.
Four eggs. Beat the whites into a meringue then fold in yolks.
Wet and drain the cauliflower then shake it in flour for stickiness
Dip cauliflower through the meringue and fry in vegetable oil until nicely browned.

Saute one chopped onion and several cloves of chopped garlic.
Add two cups of water and one 12 oz. can of tomato paste.
Heat up and mix well seasoning to taste with salt and chili powder.
Add cauliflower to the broth and enjoy. Yummy!

It was a very cheap "Great Depression" dish (1930's) that my family ate during those
difficult days. Later it became a staple with the family just because they liked the taste.

The story goes that they usually had flour, sweet and butter milk (so they ate lots of
biscuits with honey or syrup. When they could get a piece of streak-o-lean or fat-back,
they made the dish called Tennessee Chicken which became a very "special" dish.
It could go a long way in feeding a bunch of people and was tasty.

When they had some eggs available to hard boil and throw in the sauce, it really became
a "special dish", usually for Sunday dinner.

I love lots of freshly ground black pepper (from my father) and I put a lot in mine, as I
do when I make chicken and dumplings. But that is my taste.
