What's for dinner?

Mexican cauliflower soup

One head of cauliflower cut up and steamed until tender.
Four eggs. Beat the whites into a meringue then fold in yolks.
Wet and drain the cauliflower then shake it in flour for stickiness
Dip cauliflower through the meringue and fry in vegetable oil until nicely browned.

Saute one chopped onion and several cloves of chopped garlic.
Add two cups of water and one 12 oz. can of tomato paste.
Heat up and mix well seasoning to taste with salt and chili powder.
Add cauliflower to the broth and enjoy. Yummy!

That's another one I want to try...similar to one I make, but
without the whipped egg whites...and the chili powder (I use black pepper)...

Dave...
Just wanted to say I tried the soup last night and it was very, very good!
I am sure it will be a recuring dish in my favorite file....

I divided and saved some of the fried cauliflower and sauce, and will try it as an
appitizer for tonight...dipping the cauliflower in the sauce. I have a feeling it will
be good to serve as finger food (with tooth picks) at a party. We will see..

The whipping of the egg whites into a meringue first is a great idea...makes the
fried cauliflower light and fluffy like a tempura...really delicious!

Still on my nostalgic comfort food binge....

Simmering a 6lb hen for chicken stock and meat to make a big pot of

"Chicken 'n Dumplings."

In about an hour I will start preparing the dumpling dough so it
will have time to rest. Later I will roll it paper thin and then cut
into 1" wide x 4" long strips and drop them and the pieces of
meat into the boiling stock.
In about 30 minutes...voila! A Bowl of Heaven!

Not sure what I will serve it with, if anything, but I am thinking of
some breaded fried okra and a tomato, onion and cuke salad with
a vinegar dressing.

Have some banana-nut cake left over from last night...so, maybe
top it with vanilla ice cream, or Ready-Whip....
 
We had prawn and avocado cocktail followed by Flying Scotsmen with creamy potatoes and caramelised carrots then milk chocolate cheesecake with ice cream. Well we do have the munchies a lot since quitting nicotine. :redface:
