What's for dinner?

YOU mean no more biscuits with country ham? They used to be the king of the breakfast biscuit.

I don't eat country ham anymore. WAY TOO SALTY. (THANK GOD THERE AREN'T ANYMORE MOM AND POP'S KITCHEN RESTAURANTS. They had a country breakfast buffet with cast-iron skillets of country ham that was ridiculous. The ham looked soooo good though :eek:.)

Ooh honey! When I was little I thought that was the only kind of ham there was. If it wasnt ruby red I wasnt going to eat it.
 
Umm meatloaf... Maybe that's what I'll make tonight! Here is how I do it with a Yorkshire Pudding top.
1/3 pound ground sirloin
1/3 pound ground veal
1/3 pound ground pork
Mix add salt and pepper, mix in one small finely chopped onion, and 1/2 cup finely ground bread crumbs or panko bread crumbs add Worcestershire sauce about 1/3 cup
Pat half of the meat mixture into a pyrex 9" pan, then spread 1 cup thinly sliced mushrooms on top. Pat the remaining meat mixture on top of the mushrooms.
In a medium bowl sift one cup minus one tablespoon flour
1/2 teaspoon salt
In a small bowl whisk together 2 large eggs and 1 cup milk. Mix with flour mixture until smooth.
Pour pudding mixture on top of meatloaf, it should be about 1" of pudding and about an inch to spare to the top of your baking dish.
Bake in a 350 degree oven for about 30 minutes until the topping is medium golden brown.(It may sputter so bake on a cookie sheet.
Remove from oven and let cool for 10-12 minutes and slice and serve. I make a brown gravy to serve on top.
This reheats beautifully if you wrap it in foil.

Tonight I think I will try your basic meatloaf, but instead of the Yorkshire Pudding
top, I will serve with the following:

Mashed Potato substitute....(served 4)
2-1/2 Cups each of Brocolli and Cauliflower buds
4 large cloves of Garlic
Wash the B & C buds and shake off the water...do not dry.
Wrap in foil and bake at 350F for about 30 minutes...it will steam and become soft.
Remove from foil and put into blender with Tbs. EV Olive oil (or butter), some salt to
taste, and whip until thick.
Serve with the meatloaf with a dollop of Zero Fat Greek Yogurt on top.
Mixed tomato/onion/cuke Salad with a vinegar/olive Oil dressing
 
This thread has given me some ideas for dinner! Last night we made rustic potato soup, crusty homemade Italian bread and smothered mushrooms with kale. (We went off theme for dessert: gajjar halwa).
 
Grilled tuna steaks with lemon/butter/garlic/caper sauce. Garlic mashed potatos. Garlic sauteed spinach. We'll both smell like garlic so it will be alright! Maybe sherbert for desert.

A nice green salad, fresh bread and fettucine with asparagus, peas and pancetta in a light cream sauce.

I haven't had angel food cake or homemade ice cream in years; sounds good! I just did a search on angel food cake recipes and found one that included Kahlua which I think I will try.

Steamed Dungeness Crab with drawn butter, corn on the cob and a toasted baguette and beefsteak tomato's... brownies and ice cream for dessert.

Sesame beef from the Mee Noodle House on 2nd Avenue. Unbelievably efficient. I clocked them once. Seven minutes from me putting down the phone to a knock on the door. Good grub, too.
