Sort of. Gelatin is processed collagen, so it’s more tendons and ligaments. It can be processed from skin, too. Hooves are a connective tissue junction, but mainly they are used in glue production.

if you make or have soup made from bone broth, if you chill it it will be gelatinous.
Also, most flavored yogurts, especially no/low fat have gelatin in them. If they are coded kosher, that’s from fish. Luckily, pectin is starting to take over that world. Still animal products and something I’m slowly leaving behind.
I gave up anything but plain yogurt decades ago. I’ve yet to find a plant based yogurt sub without sugar, actually cultured and palatable.
