What's for dinner?


Got a hankering for some good ole "Chicken and Dumplings"
(thin, light dumpling strips.....not those awful dough balls..ugh!)
So...that's what will be for Sunday supper....served with some corn meal fried okra, and a big fresh tomato, cuke, green onion and romaine salad....and a tall iced tea.

To top it all off...some home made green tea ice cream on a bed of crushed mint leaves.
 
I plan come comfort food....need it today.

Tennessee Chicken:
(A depression dish)

Fry in a large iron skillet, pieces of streak-o-lean bacon (1/2 lb cut into small 1" pieces) until browned...not burnt.
Pour off the grease and save...and drain bacon pieces on paper towels.

Add into the iron skillet some flour (about 1/2 cup with a 1/4tps salt) and cook on a low heat...do not burn the flour.
Slowly add about 2 TBS of the grease and some milk (about 2 cup) into the hot flour to make a thin roux.
Add bacon into the roux.
Add 2 sliced hard boiled eggs.
ENJOY alone or over hot biscuits!

This is an old Depression Area dish that my grandmother used to lovinglyn serve on Sunday nights....to remind themselves and others...what little they had during those
terrible days in the late 1920's and 1930's. When they had the eggs they would add them as a special treat...but I understand
it was usually just served plain...lots of flour and milk flavored
with the bacon. Filling and cheap.

I love it and since it was served to me as a child...I knew no difference and thought it a treat too. I still do!

Today I serve it with a big Greek syle salad...and lots of Iced tea...
 
It's too god damned hot for something cooked so I'm having chocolate ice cream with a home made Chai syrup.

The spicy chai works really well with chocolate.

Yum.
 
Tonight we had sirloin steaks off the grill
Baked Potatoes with butter, sour cream and cheese
Salad
and Garlic Rolls


and now.......... A Little Piece of Heaven and Hot Tub

A Little Piece Of Heaven
Drink Type: Cocktail
Ingredients
1 1/2 oz. Malibu Rum (more Malibu Rum drinks)
1/2 oz. Peach Schnapps (more Peach Schnapps drinks)
2 oz. Orange Juice (more Orange Juice drinks)
2 oz. Pineapple Juice (more Pineapple Juice drinks)
3 oz. Cranberry Juice j (more Cranberry Juice drinks)


Instructions
Mix all ingredients over ice. Garnish with a slice of orange and a speared cherry.

Hmm. Two great tastes that to me don't necessarily go well together.....Well, ya learn something every day.
 
Roast chicken w/ roast potatoes, mushrooms, onions and carrots; couscous with pine nuts; sauteed collard greens; cornbread with honey.

Arugula/avocado salad with balsamic vinaigrette.

Hmm. Two great tastes that to me don't necessarily go well together.....Well, ya learn something every day.


There are a few tricks to making it work....use a very restrained hand with the syrup..
I'm talking about a teaspoon and a half of syrup per bowl maximum and don't use a chai blend that is too heavy in cloves.
 
Last night....
Roast pork loin with macadamia nut bread crust served on rice with hot and spicy tropical fruit relish, steamed green beans, mixed green salad. White chocolate macadamia nut cookies with vanilla ice cream.
 
Spinach salad (pine nuts, cauliflower, carrot, croutons, goat cheese), home made bread, 4 cheese tortellini in a marinara sauce :smile:
