What's for dinner?

Since this thread got linked recently in another one (thank you, @chicagosam )...

I do meal prep, freezing and portioning stuff to eat throughout the week. Tomorrow is my day of cooking. I'm making baked egg "muffins" (sage sausage, spinach, onion, cheese) for breakfasts, parmesan peppercorn chicken pasta with peas and spinach for lunch, and dinner is going to be a Guinness beef stew (carrots, peas, mushrooms, radish subbed for potatoes which I know is a bit blasphemous but they're lower carb and in a stew the difference is hard to detect etc) and mashed turnips on the side. Om nom nom

Freshly pressed carrot, apple, beetroot and ginger juice.

Love juice fasts.
 
Lu rou fan, or Taiwanese style braised minced pork. Steamed rice. Stir fried gai lan (Chinese broccoli) with a bunch of garlic.

last night: rice and celery soup, boneless beef shanks braised wih root vegetables served with barley pilaf, and for dessert, apples, pears, and grapes with Rogue Creamery Crater Lake Blue and cheddar cheese. (I had company). Wine: Evesham Wood Pinot noir (Oregon, $18.00/btl).

tonight: homemade tomato soup, ham and Coastal cheddar cheese grilled sandwiches, and for dessert, pumpkin bars. Beer: Na Zdravi pilsener, Oregon)
 
Country style fried chicken, collard greens with ham hock, baked sweet potatoes,
fried okra, green salad with tomato, cucumber, radishes with buttermilk dressing.
Ice tea and baked egg custard with raspberries.

Tomorrow: New Years Eve...
Raw oysters (family tradition)

Bake ham with fried apple, collard greens, black eye peas, spoon corn bread and
melted butter sauce, Beer.
Fried apple turnovers and vanilla ice cream.

So what are all of you cooking and serving for New Year’s Day dinner?
Invited to friends....had a traditional Southern meal....(they are from South Carolina)
Baked ham, turnip greens, black eyed peas, corn bread,
cucumber, tomato and onion salad.
Sweet potato pie and vanilla ice cream.

Butter Chicken and Saffron Rice.

It's my last high fat, animal content meal and then I'll actually take the dietary advice from my Cardiologist.

I give myself 2 weeks on a whole food plant based diet....but we'll see.
I'm tempted to go on the Fat, Sick and Nearly Dead 60 juice fast before stepping into
whole food plant based eating.
By then I'll be grateful to be eating solid food regardless of what it is.

Method to my madness.

Thinking about:

Chicken fried steak...../or/.....Pork Chops with fried apples....??
Baked sweet potato with orange butter sauce...
Succotash....
Mixed salad with vinaigrette...(lettuce, tomato, cucumber, onion, mushrooms)
Buttermilk biscuits...
Lite beer...
Maybe....vanilla ice cream and strawberries....or....lime sherbet..??





 
One of my guests called and asked if I was going to have
meatloaf...since he loves my meatloaf......so I decided to
have it instead of the pork chops or chicken fried steak.
It was a big success...and all enjoyed the evening. :)
